Tempered bombs on the ground: FOOD IS NOT SAFE TO EAT IN THE SUMMER

High summer temperatures create favorable conditions for the proliferation of invisible pathogens in food. Bacteria such as Salmonella and E. coli multiply rapidly within what is known as the “dangerous zone”—a temperature range between 5 and 60 degrees Celsius.

Within this zone, the number of microorganisms in food can double every 20 minutes. To ensure safety, prepared food and easily perishable ingredients should not be left at ambient temperatures for more than two hours. However, there is a specific summertime adjustment to this guideline.

When the counter temperature rises above 32 degrees Celsius, the recommended safety window is significantly reduced to just one hour. Meat, regardless of whether it is raw or roasted, remains one of the most vulnerable food items due to its high content of protein and moisture. Furthermore, consuming raw or roasted fish carries inherent risks.

Adhering to strict temperature controls is crucial during the summer months to mitigate the risk of bacterial growth and ensure food safety. Proper handling and timely refrigeration are essential practices when dealing with perishable ingredients during the hot weather of summer.
