René Redzepi, a prominent figure in contemporary gastronomy, has stepped away from daily management of Noma in Copenhagen, a restaurant that for years symbolized new Nordic cuisine and reached the pinnacle of the global culinary scene. Redzepi has resigned from his role as head chef at the renowned Noma due to allegations of abuse. Redzepi announced his decision on social media.

“After more than two decades of building and leading this restaurant, I have decided to step back and allow our exceptional leaders to guide the restaurant through its next chapter,” Redzepi stated. This decision follows renewed accusations of physical and psychological mistreatment of employees between 2009 and 2017. The scandal intensified after an investigation by The New York Times, which interviewed 35 former Noma employees.

Their accounts detailed a pattern of physical and psychological abuse within the kitchen between approximately 2009 and 2017. Former staff reported incidents including physical assaults, injuries from kitchen tools, humiliation before colleagues, threats to damage careers, and blacklisting. These accounts depicted a culture of fear and intimidation.

Some employees also mentioned concerns regarding immigration status or family employment, claims disputed. Redzepi’s departure represents a significant blow to the myth built around Noma. The restaurant was repeatedly named the best in the world, earning three Michelin stars and establishing a global cult following for culinary innovation.

However, according to accounts from former employees, a darker reality existed behind this image: humiliation, aggressive behavior, and an atmosphere where fear was commonplace. Redzepi acknowledged his past behavior harmed those who worked with him and deemed an apology insufficient. Noma confirmed his immediate withdrawal from daily operations, though his ownership role remains uncertain.

Simultaneously, he has stepped down from the board of the organization he founded, MAD. The scandal gained further weight coinciding with Noma’s expensive pop-up residency in Los Angeles, where a meal cost $1,500. Following the allegations, some sponsors withdrew, and the opening was met with protests.

This crisis has evolved beyond a local restaurant issue into a public debate about the cost of perfection in high gastronomy and the extent to which star status can conceal abuses behind kitchen doors. Noma has recently made changes to the workplace culture, including paid leave, improved working hours, and expanded benefits for staff. However, Redzepi’s departure demonstrates that the damage is now irreversible, beyond the narrative of a legendary restaurant.
